Morning Market Runs
Every day before dawn, our sourcing team visits Carmel Market and select Tel Aviv-Yafo vendors. Citrus is squeezed for ripeness, herbs are checked for fragrance, and tomatoes are chosen for color and weight — never shelf life alone.
We buy only what we'll use that day. No walk-in coolers stuffed with aging produce. What you eat was likely still growing or sitting at a market stall less than 24 hours ago.
Herbs at the Heart
Mint, parsley, cilantro, and dill aren't garnishes at Mediterranean Bowl — they're core ingredients. We work with herb growers in the Sharon region who harvest in small batches and deliver within hours.
The difference is immediate: a bowl that smells alive before you take the first bite. That brightness is something no dried spice or bottled sauce can replicate.
Prep with Purpose
Back at the cafe, our kitchen team washes, chops, roasts, and pickles with intention. Vegetables are cut to size for each bowl. Grains are rinsed and cooked in seasoned broth. Sauces are whisked fresh every few hours.
